Each individual user has a number of settings he can choose from.
As an administrator it should be possible to setup defaults for these.
Ex. Reading new messages when login.
I changed the initial value when creating a new rec i SQL - it seems to work.
Now I have realized that users don't understand that when they have deleted a mail in Webmail its still accessible from outlook/outlook express.
How is it possible to change the default rules for deletions?

You can change default value for new record in SQL table just as you did for 'Reading new messages when login'.
wm_users.int_mail_mode has the following meaning:
0 - delete received messages from server
1 - leave messages on server (default)
2 - Keep messages on server for x days
3 - Delete message from server when it's removed from Trash
4 - combination of 2 and 3
In your scenario, you should change default value from 1 to 3.
