I've one client who wants MailBee Pro on their server, but I also need to modify a few things. Do I get a developer license or a single computer licence, as it will be a stand alone application but I will need to develop on my test servers?

If you're not going to use WebMail Pro as a component of your significantly more complex application which will be redistributed, but going to install the product to a server (and probably integrate with your web site) to provide users with a webmail service, Single Computer license is right choice.
All licenses allow modifying the source code.
