Hi,
I'm having an issue with a handful of emails appearing blank when they're opened by the person they are sent to. It appears to be isolated to users using Entourage. Other people that are on the email being sent can read the mail fine, however.
Any ideas as to why this may be happening? It's a reproducible event.

Something's probably wrong with the way that client builds messages. We might be able to take a look if you save one of such messages as EML file (that can be done by WebMail itself), upload it somewhere and provide a download link here.

I was able to open it in the latest version of WebMail (PHP edition), it's displayed as follows:
Isn't that what you observe, and the message opens completely empty?

Yes, that's what I see. User 1 is unable to view the message sent by user2 or user3, which is why they've replied complaining about 'another blank email'.
Both User 2 & User 3 use Webmail and User 1 uses Entourage.
Is there anything I can try to help diagnose the problem?

If what you see matches the screenshot, then WebMail does everything correctly. It's not about webmail showing message empty - it's about message itself is actually empty, it doesn't contain any other text except for that one displayed, and you should be able to confirm that by checking EML itself. Thus, it looks like something's wrong with client used for sending the email, and the issue should be fixed on that end.
