Me again,
the title says it all really. I don't want users to be able to edit their account settings and so could do with hiding that tab from the Settings section if possible please.

Check "Common Settings" screen of AdminPanel, you'll find "Allow new users to change email settings" option. As the name suggests, that won't be applicable to existing user accounts.
And if you'd rather hide the link itself, check through the source code, find where the link is generated and replace its classname with wm_hide. Researching things like this is really simple if you use Firebug extension of Mozilla Firefox.

I am having same issue, even if I have uncheck "Allow new users to change email settings" from default domain page, user are still able to access it, have any idea for its location?

That's a known problem in current version of the product, it will be fixed in the next release.

How to I set it so the email users cannot change:
IMAP Server & Port
Login & Password
SMTP Server & Port
Use SMTP authentication
Change password
I want them to be able to modify "Your Name" still though.
How do I do that?

As I already outlined in this topic, that setting doesn't work due to a bug, and it'll be fixed in next release.
