Webmail could need a function so that one can specify in which folder a particular email should end up in (a roul function so to speak).

Not sure if I understood the idea. Are you speaking of a filesystem folder associated with the
particular user account, or IMAP folder? If that's the former, WebMail Pro, starting from 6.0 release,
utilizes direct mode for IMAP accounts so that messages are not stored in filesystem or database.

Well, the former is on filesystem, while IMAP folder is something like Inbox, Sent Items, Trash etc.
In terms of IMAP, that's also known as IMAP mailbox.

Do IMAP folders not reside on the filesystem?

Not on web server. As long as we are speaking of webmail client, filesystem
refers to storage used by webmail client itself, not the one used by mail server.
