As I understand it, the temp folder, into date folder (date/temp), is just to temporarily store the files that are being attached.
The quastion is: Can I, from time to time, delete all the folders into date/temp without harming the emails and their proper attachments?
In our server, with 25 email accounts, only this folder is occupying 23 Gigabytes of space hired on the server.

Sure you can clear that folder, and there's clear-tmp.php script for that available in examples folder. Main goal of the script is to make sure only outdated data are purged while recent files remain intact. The script can be run manually from time to time, or via cron. See API documentation on how scripts of such kind should be used.
