I have an organization of more than 180 email users, and ONE user has an issue wherein he is unable to login to webmail.

No one else is having this issue at all. The user's email account is still working, as he can access it from Outlook and other email clients.

The error at login is
"Internal server error. Please, contact your system administrator in order to report the problem."

I've checked the logs, and they do is report an error in the application, but nothing more helpful that that.

I'm at a loss to explain why this happens to this one user, and no one else.

Is this about ASP.NET or PHP version of WebMail? If it's the .NET one, you need to activate special debug logging as per this documentation page, replicate the issue and see what's recorded there. And in case if you're using PHP version, logs of web server should be examined.
