When I create a MailMessage object and serialize it to a xml file. It doesn't seem to serialize the attachments. I see the CDATA elements in the xml, but they're empty even though I have two attachments in there... Is this a limitation of the trial version or something or am I doing something wrong?

We've just tried to reproduce the issue, but were unable to do this, everything worked fine.
Please make sure you are using the latest version of MailBee.NET Objects.

No, actually the installer is the same for trial and licensed version, the only difference is license key type.
If you still get this issue with the new version of MailBee.NET Objects, please provide us with the e-mail message (as an .eml file) which causes the issue.
You can send this info using Request Support Form.
Best regards,
Andrew
