is that possible to replace the email address by Full Name or User Identity after logged in?

Yes, it should be possible. And we allow the modification of the source code. Free support is only about standard use of unmodified product, though.

ex: some display options:
display Name
display Name - Email
display Email

Or maybe adding a fancy info about quota or mailbox storage status, that would be great, on header or next to Name/Email info above or under "Manage Folders" link

We don't plan modifications of that kind. But if you believe the feature might be interesting for other users of the product, please feel free to post a feature suggestion at http://afterlogic.uservoice.com/. If the feature gets substantial number of votes, we will consider implementing it. We do use Uservoice voting results when building the product roadmap, and quite a few features requested there were eventually implemented.
